The other day I was craving something slightly chewy and sweet. Not having a car to go anywhere in to purchase something I went to the pantry and started pulling things out that looked like they might work in a recipe. This bar cookie or blondie as the accountant refers to it was the result. Warning I had no xanthum gum to help stick it together so it is a tad crumbly. There are eggs in the recipe so that helps. Even though they are crumbly they are oh so good!!!
Ingredients: 4 1/2 cups of organic gluten free rolled oats1 cup of organic coconut flour
1 teaspoon of baking soda
1 teaspoon of organic vanilla
4 eggs
2/3 cup of extra virgin coconut oil
1/2 cup of honey
1/3 cup of raw sugar
2 cups of dairy free chocolate chips
Preheat oven to 325 degrees. Pre grease a 9x13 inch glass pan
In a large mixing bowl place oats, coconut flour,eggs, 4baking soda, vanilla, coconut oil ( melted), honey, and sugar. Stir in the 2 cups of chocolate chips.
Place in 9x 13glass pan. Press down lightly. Place in oven. Bake for 20-22 minutes, until golden brown. Cool for 15 minutes then cut into bars. Enjoy! Let cool completely before removing from pan.
