So being as it is the beginning of busy season for accountants I thought I should make something yummy for my accountant to take to work with him and share with everyone else. I happened to have an overabundance of oatmeal and buttermilk on hand so I took liberties with my normal oatmeal cookie recipe and came up with this!
Ingredients:1 cup of organic extra virgin coconut oil
1 1/2 cups of rapadura (organic whole cane sugar)
2 eggs, organic
1/2 cup of buttermilk
1 and 3/4 cups of organic whole wheat flour
1 teaspoon of baking powder
1 teaspoon of baking soda
1/2 teaspoon of sea salt
1.5 teaspoons of ground ginger
1.5 teaspoons of ground nutmeg
1.5 teaspoons of ground cinnamon
1/2 teaspoon of ground cloves
1/2 teaspoon of allspice
2.5 cups of thick rolled oats
1 cup of organic thompson raisins
1.5 cups of organic chocolate chips
1 teaspoon of organic pure vanilla extract
Directions:
Preheat oven to 350 degrees F.
Cream together coconut oil, and sugar. Add eggs and beat until mixed. Then add in buttermilk and vanilla extract.
In a seperate bowl mix together flour, baking soda, baking powder and spices. Stir into creamed mixture. Then add in oatmeal, raisins and chocolate chips. Blend well.
Drop by the teaspoon full onto a cookie sheet and bake for 12 minutes.
Oh mummy this garlic looks yummy!!!
Hmmm...maybe I should take away the garlic and give you a cookie!
