Gluten free, dairy free brownies

These brownies were my experiment today. They are yummy. The texture is cake like. They would be fabulous with frosting but not enough time to do that today with a very active 6 month old!

Gluten free brownie ingredients:



6 Tablespoons of extra virgin coconut oil
1 cup of gluten free flour baking mix
1/3 a cup of unsweetened cocoa powder
1 1/4 teaspoons baking powder
1 teaspoon of salt
1/4 teaspoon of baking soda
1 cup of organic sugar
1 cup of unsweetened organic applesauce
1 large egg
8 ounces of semisweet chocolate chips or finely chopped semisweet chocolate

Preheat oven to 350 degrees. A 8 inch pan is ideal, I used a 8 by 10 pan. Optional: grease pan.
In a medium bowl mix together flour, cocoa, baking powder, salt and baking soda
In a large bowl ( I put mine in the kitchen aid mixer bowl), stir together sugar, applesauce and egg.

Place coconut oil and 6 ounces of the chocolate in a saucepan on stove. Heat until mixed together. Stirring constantly. DO NOT burn the chocolate.


Stir the chocolate mixture into the liquid mixture than add flour mixture.




Pour into baking pan and sprinkle top with the remaining 2 ounces of chocolate.

Bake about 40 minutes until a toothpick or knife inserted in the center comes out with moist crumbs attached.

Cut into 2 inch squares when cool.
Tastes great with coconut ice cream!!!
May store in an airtight container for about 5 days.

  2. I am glad your recipe calls for applesauce, I did a recipe with prune baby food and it was good too, but I don't keep it on hand, but applesauce I have in house constantly. They look amazing!
