Quick Dinner of Chicken sausage and brown rice

Today was so hot I wanted to make something quick and easy. I opened the fridge to see what I had. Yesterday I had purchased chicken sausage at Trader Joe's for 3.99 and I had left over brown rice (about two cups). (I purchased a large bag of organic long grain brown rice from Costco for 7$.) I decided to make a quick rice based stir fry. I put two tablespoons of organic extra virgin coconut oil in a cast iron dutch-oven on the cook top. To that I added the 4 chicken sausages that were now cut into small pieces. After the sausages were browned on both sides I added a half a sweet yellow onion, half an organic green pepper (from the farmers market), half a tomato, a can of organic diced tomatoes, a bundle of Italian parsley (cut small) and a cup of frozen organic Costco peas. When I thought the veggies were softening I added my two cups of cooked brown rice, a teaspoon of Tabasco sauce, 3 cloves of crushed garlic and two tablespoons of pepper. I mixed it all up, added one more tablespoon of coconut oil and covered it and placed it on low to warm for 20 minutes.
After the rice warmed through I served dinner! It was delicious.

  2. Sounds delicious:) We had a low budget Alaskan meal of grilled salmon. I am resolved to cook salmon waay more often in the future as it is not only budget friendly, but very nutritious as well.
