Jessica's Fail Proof Spaghetti
So the first key to making spaghetti is always having diced tomato's on hand, along with a few Italian spices such as oregano, basil and garlic. To make this dish I opened my pantry and fridge doors to see what ingredients I had available. The following recipe is what resulted.
Serves 4-6. Prep time: 10 minutes Cook time 30-40min
Ingredients:
2 Tbls organic extra virgin coconut oil or Olive oil
1 pound Grass fed beef or chicken
1 tsp of ground black pepper
10 gloves of garlic, crushed
1/2 yellow onion, diced
1/8 a tsp of crushed red pepper (optional)(I buy in large quantity at Costco)
1/2 a sweet bell pepper, diced
2 Tbls of dried basil (I buy in large quantity at Costco)
2 Tbls of dried oregano (I buy in large quantity at Costco)
1/2 cup of dry red wine
2 15 oz cans of organic diced tomatoes
24 oz jar of organic strained tomatoes (crushed)
Noodles of your choice. I used 1 pkg of trader Joe's brown rice spaghetti noodles around $2 per pkg
fresh garden herbs if you have them available, bail and oregano
How to put it all together:
First things first. Baby goes someplace to occupy herself:
Pull out two large pots. One for noodles the other for the sauce:
I place coconut and beef in the red pot on medium high heat.
Break up beef in pot and allow to brown slightly. While meat is browning dice onion and bell pepper
When meat is about half brown as in above picture add black pepper, garlic, hot pepper, onions and sweet bell pepper
Mix together and continue to cook until meat is brown
When meat is brown add canned diced and crushed tomatoes, along with red wine
Mix together thoroughly. Place burner on low and cover pot. Allow to simmer for 20 minutes
While sauce is simmering cook noodles according to directions on pkg. ( I made brown rice pasta boiled in 2 Tbls of olive oil)
Serve with side of choice
