Yesterday after I finished drinking my hot coffee I decided to put the rest in a container in the fridge so I could make iced coffee this morning. ( I buy organic coffee beans at Costco for around 14 dollars, for 3lbs. It is not as strong as Starbucks drip coffee.)
What you will need for 1 serving in a 16 ounce glass:
Ice to taste
Refrigerated coffee 1 cup
Coconut milk (I used 1/4 of a cup per glass, use 1/2 a cup if you want more of a latte) you may also use of course regular milk. ( Coconut Milk is 2.99 at Fred Meyers this week in the "health foods" refrigerator section)
Optional: Stevia extract 2-5drops for sweetening or sugar to taste.
Place ice in the glass of your choice (if you really like the coffee flavor you can also plan ahead and freeze coffee into ice cubes the day before, I didn't plan that far!). Pour the cold coffee into the cup then top off with the milk of your choice. If you like sweet coffee add Stevia to taste. ( I don't add sweetener to mine.)
Of course prior to making the coffee I imagined sitting outside with my bible and enjoying the coffee while reading. The reality is I carried it around the house with me all morning while entertaining a needy 5 month old.
Good way to use up that left over coffee without waisting it.
