Roasted Asparagus

Asparagus officinalisImage via WikipediaAsparagus is in season! Olivia and I LOVE asparagus. My favorite way to cook it is roasted. In fact until I learned I could roast it I HATED asparagus with a passion (same goes for broccoli). So here is a simple tried and true way to eat your organic asparagus.

1. Preheat your oven to 450 degrees. Take a baking sheet and place your trimmed asparagus (about the last 1.5 inches) spears on it. (For cleaner cooking, line with parchment paper.

2. Next drizzle vinegar or Extra Virgin Olive Oil (my personal favorite) or an orange over the asparagus, salt and pepper to taste. You can also wrap them in bacon or season them with crushed garlic.

3. Roast until tender about 10 minutes. Watch carefully sooner than the ten minutes since they turn brown so quickly.

  1. a better option for trimming asparagus is not to trim at all. instead, let the asparagus guide you. the spears have a "sweet spot" where they naturally want to snap and are the most tender, yummy, nutritional part of the spear. what to do: pinch the end of the spear, and then right below the head of the spear, bend the asparagus, and SNAP! itll break right at the sweet spot. they wont be as uniform in size, but since when is nature ever perfectly uniform? :D [plus, its a knife you dont gotta wash later...and when olivias older, shell have fun helping break them!]
