Menu Plan for the week of Feb 14 2011

I have found I make much better use of my food when I take the time to quickly look through my pantry, fridge and freezer and decide what to cook for the week. Here is what I came up with for this week!

Monday Feb 14, 2011
Happy Valentines Day!
Breakfast: Oatmeal with almonds, raisins and coconut flakes
Lunch: Chicken Salad  with apple cider dressing (Olivia will eat anything including this. She loves the dressing)
Dinner: Steak, potatoes and mushrooms

Tuesday Feb 15 2011
Breakfast: Scrambled eggs with mushrooms and zuccinni
Lunch: Chicken Salad Sandwiches with Salad
Dinner: Stuffed Green Peppers and Rice

To do: Soak the oats!

Wednesday Feb 16, 2011
Breakfast: Oatmeal again ( I am going to try soaking it, which I have never done. This will be an adventure!)
Lunch:  Cucumber and hummus sandwiches
Dinner: Chicken Soup

Thursday Feb 17th, 2011
Breakfast: Mexican egg wraps
Lunch: Left over chicken soup
Dinner: Pot roast

Friday Feb 18th, 2011
Breakfast:  Quinoa porridge
Lunch: Black bean and corn salad
Dinner:  Taco Salad with shredded beef from pot roast

Eggs appear to have been heavy on my mind for breakfast this week. They are so good for you and so cheap at the same time. Well cheap is a relative word. I pay extra for organic pasture fed. But still cheap compared to grass fed beef! I am ordering pasture raised lamb this week, which I am excited about. I have never done that much with lamb...

Menu Plan for the week of Jan 16th 2011

Some of the recipes are not dairy or gluten free just because he has been begging for some bread and milk. I will tell you what I am substituting for me on the days I am feeding him all my allergens!

Sunday:
Breakfast: Oatmeal with almonds and Jam
Dinner: Creamy Chicken Alfredo with roasted carrots and broccoli ( I will eat rice pasta with a tomato sauce)

Monday:
Breakfast: Oatmeal (all week actually because I am craving it!)
Dinner: Italian Roast Wraps (flour tortillas for the accountant, gluten free for me)

Tuesday:
Dinner: Burgers on homemade buns with potato wedges

Wednesday:
Dinner: Chicken veggie quesadillas

Thursday:
Dinner: Chicken soup with black rice (instead of potatoes in my recipe I used rice)

Friday: Sloppy Joes with corn

Saturday:
Leftovers!

Since there are only two of us lunch is always leftovers from the night prior. Recipes will come throughout the coming week.

Menu Plan for the Week of Jan 2 2011

Dinner Meal Plan for the week of January 2, 2011. I will post recipes as I make the meals.

Sunday- White Wine Baked Cod with Roasted Brussel Sprouts

Monday- Shepards Pie

Tuesday- Homemade Pizza

Wednesday- Ground Beef Crockpot Chili

Thursday- Left overs

Friday- Spaghetti

Saturday- Leftovers/ Sandwiches

Menu Plan for the week

This week is full of activity for our family. I love the bustle and busyness of this time of year. Today is my cleaning, budgeting, meal planning day. I must say this is the first year we have bought a quarter of an organic grass fed cow and I am loving the convenience and taste of it. It is wonderful to get most of your meat buying for the year done in one fell swoop. We will most definitely be doing it again next year! I will probably purchase a half a cow due to my love to entertain. We can feed more people that way. So here is the dinner plan for the week. I am also planning on getting some holiday baking and prep for our annual Christmas party done.

Monday: Ginger turkey stir fry with rice noodles and salad

Tuesday: Pot roast with potatoes and green beans (the link is a recipe I am going to change up a bit to suit my needs)

Wednesday: Sprouted grain enchiladas with shredded beef and brown rice, salad

Thursday: Chili with sprouted grain bread

Friday: Christmas party with a pot roast

Saturday: The accountants birthday so we are eating out!!!

Sunday: Chicken Soup
