Great Article on Gluten Sensitivity

Gluten free diets have become all the rage the past few years. Here is a great article on gluten sensitivity. One of the reasons suggested for the rise in gluten sensitive people is the genetic altering of wheat to contain more protein. Gluten is a protein. Perhaps the chemical companies should actually care about what they are doing to people's bodies with their GMO food.

Organic Potato, JalapeƱo and Leek Soup

So I was craving soup today. It must be the smell of fall in the air. There is something homey and comforting about a nice warm bowl of soup. I had a surplus of potatoes I wanted to use up so I ran to the grocery store to buy a leek. Now in the fridge I had some jalapenos that looked like they were beginning to go so I decided I must use them to. The result was this spicy, warm, yummy soup.

Serves: 4-6 people 
Prep and Cook time: 1 hour

Ingredients:
3 Pounds of organic potatoes (Klesick box of good and trader Joe's)
4 cups of organic chicken broth or stock (Costco)
1 large organic leek (local co-op)
1 medium organic yellow onion (Fred Meyer)
6 cloves of garlic
Himalayan salt and black pepper to taste
fresh garden herbs of chives, basil and thyme ( about 2 tablespoons of each. Feel free to substitute dried herbs)
1 cup of milk of your choice ( I used almond milk)
garlic powder
1-2 organic jalapenos (depending on how spicy you like your food)
4 tsp of fresh cilantro

In a large 6 quart dutch oven or pot place chicken stock (or vegetable stock), potatoes and black pepper. Place on medium heat. Cover and let simmer until potatoes are soft about 20 minutes.


In another saucepan place coconut oil, onion and leek. Cook on medium heat until onions are soft and translucent. (about 6-10 minutes)

Baby is busy on the floor.

Next add jalapenos, diced to the potato pot.


Then add the fresh spices, garlic, cilantro, milk, and cooked onions and leeks to the potato pot.

"MOM! pay attention to me! See I am moving all around!"

Take half the potato mixture and put in your blender. Blend and add back to the dutch oven. Simmer for five minutes more and serve!

Very Simple Quick Summer Dinner Salad

Saturday afternoon I did not feel like cooking at all. The accountant was outside busy doing yard work and I knew he would be starving come dinner time. I opened the refrigerator and thought " I don't have much". This is what I pulled out.
Serves 2-4. Time 20 minutes (more if you have to cook rice)

1 Organic lettuce (from PCC)
1 cup Organic cooked brown rice ( uncooked purchased at Costco)
6 Organic mini tomato's (purchased at Costco)
8 Tablespoons sunflower seeds (from trader Joe's)
1 can of garbanzo beans ( Eden canned from vitacost, dryed of course would be cheaper but this is quicker)
Goddess dressing (trader Joe's 1.99 per bottle)
8 Organic "baby" carrots (Costco)
6 Mini portabello mushrooms (Costco)
1 Organic apple (Fred Meyers)

With baby on my hip because she was to fussy I threw together two salads. Granted items were not chopped as small as they would have been if baby was not on hip.!

First place warm brown rice on plate. 1/2 a cup is plenty per plate.

Place about 1 cup of chopped lettuce on top of rice


Then Cut tomatoes in half and place on salad 



Then place carrots on salad. Mine are not chopped but I think it's better if they are




Rinse garbanzo beans and place 1/4 to 1/2 cup on salad




Add sliced mushrooms




Dice 1/2 apple and place on salad followed by sunflower seeds to taste and dressing




Serve. As you can see it makes a large salad. This is the accountants portion.

Grass Fed Beef Fajitas


Grass Fed Beef Fajitas:

Ingredient List:
Grass Fed Ground Beef 1 lb
2tbls of ground black pepper
1 tsp of crushed red pepper
one large onion ( I used half a red onion and half a sweet yellow onion), minced
1 red bell pepper, diced
1-2 jalepenos, diced
1 bunch of cilantro, minced
brown rice
refried beans
tortillas
optional toppings:
salsa
avacado

Serves 3-4 people. Time 30 minutes


Olivia time to go in the high chair and play mommy wants to cook dinner for daddy



Okay mama...maybe I will stay here for a while

Place ground beef in pan on cook top. Place heat on medium. Then add black pepper and crushed red pepper.

Then add onions


Mommy take me out of the high chair. ( Olivia was not wanting to stay in the chair. So I cooked the rest while holding her. She had her own personal cooking lesson)



Then I added minced cilantro

I broke up the beef and sauted on medium heat until meat was beginning to brown


Then add your bell pepper and chopped jalapenos


After meat is brown it is ready to serve. I served mine with brown rice, refried beans and Teff tortillas (the teff tortillas were on sale at Fred Meyers and I was too tired to make my own today!)
