Organic Gluten and Dairy Free Blueberry muffins




First heat oven to 400 degrees Fahrenheit. Make sure rack is in the middle of oven.
Gather together your ingredients:






  • 6 tablespoons of organic extra virgin coconut oil ( I currently buy with subscribe and save through amazon.com)





  • 1 cup Organic cane sugar (large bag from Costco)





  • 1/2 cup canned whole fat coconut milk (I bought this at Fred Meyer)





  • 1 large egg





  • 1 1/2 cups all-purpose gluten free flour (Fred Meyer, Arrowhead Mills brand)





  • 1 1/2 teaspoons baking powder





  • 1 teaspoon cinnamon





  • 1/2 teaspoon salt





  • 1 1/2 cups blueberries (7 1/2 oz) (purchased from trader joes, frozen section, organic)





  • Special equipment: a muffin pan with 12 (1/2-cup) muffin cups; 12 foil or paper muffin liners





  • Mix together coconut oil, sugar, coconut milk, and egg. In a separate bowl mix together flour, baking powder, cinnamon, salt. Add flour mixture to liquid mixture. Stir together. Fold in blueberries.







    Hey mom look what I can do!!!



    Place in muffin tin. Bake in oven for 25- 30 minutes.Enjoy!

    2. Hey, I was reading that if the organic product comes in plastic it kind of undoes the point of it being organic. I am going to buy in glass from now on.
